Cowboy Prime Rib

Serves:

  • Ancho chili powder
  • Granulated garlic
  • Brown sugar
  • Ground cumin
  • Ground oregano
  • Kosher salt
  • Ground black pepper
  • Cider vinegar
  • Water
  • Ground black pepper
  • Kosher salt
  • Hungarian paprika
  • Brown sugar
  • Louisiana hot sauce
  • Worcestershire sauce
  • Chili powder
  • Prime rib bone-in

DRY RUB:
Combine all the ingredients well.
Place prime rib in a large roasting pan and coat with dry rub mixture.
Cover Prime rib loosely with plastic wrap and refrigerate overnight.
MOP SAUCE:
Combine all the ingredients in a medium-size sauce pan and bring to a boil, stirring to dissolve and blend
the sugar and spices. Reduce down about one-quarter.
ROTISSERIE:
Preheat gas grill to low and skewer Prime Rib securely on rotisserie rod.
Grill for 2 to 2 1/2 hours or until thermometer inserted into thickest part of meat (not touching the bone) registers 125°F for medium-rare.
Baste with mop sauce every 15 minutes.
When finished, remove Prime Rib from grill and let rest for 10 minutes before slicing.
